Prepare the Vegetables
Wash and chop the bell peppers, zucchini, and red onion. If using fresh corn, cut the kernels off the cob.

Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the chopped vegetables and corn, and sauté for about 5-7 minutes until they are tender. Season with salt and black pepper. Remove from heat and set aside.
Assembling the Quesadilla

Layer the Quesadilla
Place one flour tortilla in a clean skillet over medium heat. Sprinkle a generous amount of cheese (about 1/2 cup) over the tortilla, followed by a portion of the sautéed vegetable mixture. Top with another layer of cheese and cover with a second tortilla.

Cook the Quesadilla
Cook for about 3-4 minutes on one side, or until the bottom tortilla is golden brown and cheese begins to melt. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and the cheese is fully melted.

Repeat the layering and cooking process with the remaining tortillas, cheese, and vegetable mixture.

Remove the quesadillas from the skillet and allow them to cool for a minute. Cut into wedges and serve with fresh cilantro, sour cream, and salsa on the side.
