Method
Preparation of Chicken
- 1
Marinate the Chicken
In a bowl, combine the boneless chicken breast, olive oil, lime juice, and fajita seasoning. Cover and let it marinate for at least 30 minutes at room temperature or in the refrigerator for up to 2 hours.
Cooking Vegetables
- 2
Slice and Sauté the Vegetables
While the chicken is marinating, slice the bell peppers and onion into thin strips. Heat a large skillet over medium-high heat and add a tablespoon of olive oil. Add the sliced peppers and onion to the skillet, sautéing for about 5-7 minutes until they are tender and slightly charred. Remove from the skillet and set aside.
Cooking Chicken
- 3
Cook the Chicken
In the same skillet, add the marinated chicken and cook for about 6-8 minutes on each side or until cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing into strips.
Assembling Fajitas
- 4
Warm the Tortillas
In a separate pan or microwave, warm the flour tortillas until they are soft and pliable.
- 5
Serve the Fajitas
To serve, place a few strips of chicken, sautéed peppers, and onions onto a warm tortilla. Top with sour cream, shredded cheese, guacamole, fresh cilantro, and salsa as desired. Roll up the tortilla and enjoy!
