Pork Belly

    Prepare the Pork Belly

    Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crisscross pattern with a sharp knife, making sure not to cut into the meat. Rub the salt and black pepper all over the pork belly, making sure to get it into the scored skin. Drizzle olive oil over the meat.

    Roast the Pork Belly

    Place the pork belly on a rack in a roasting pan and roast in the preheated oven for about 2.5 to 3 hours, or until the meat is tender. Increase the oven temperature to 475°F (245°C) and roast for an additional 20-30 minutes, or until the skin is crispy.

    Rest the Pork Belly

    Remove the pork belly from the oven and let it rest for at least 15 minutes before slicing.

Apple Sauce

    Prepare the Apples

    Peel, core, and chop the apples into small pieces.

    Cook the Apples

    In a medium saucepan, combine the chopped apples, sugar, lemon juice, and cinnamon. Cook over medium heat, stirring occasionally, for about 15-20 minutes, or until the apples are soft and have released their juices.

    Blend the Sauce

    Use a potato masher or an immersion blender to puree the apple mixture to your desired consistency. Set aside.

Seasonal Vegetables

    Prepare the Vegetables

    Wash and peel (if necessary) the carrots and zucchini. Slice the carrots, zucchini, and bell pepper into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the prepared vegetables, season with salt and black pepper, and sauté for about 8-10 minutes, or until they are tender but still crisp.
