Churros Dough

Prepare the Dough
In a medium saucepan, combine water, unsalted butter, granulated sugar, and salt. Bring to a boil over medium heat.

Add the Flour
Once boiling, remove from heat and immediately stir in the flour until it forms a ball of dough.

Incorporate Eggs
Allow the dough to cool for about 5 minutes, then add eggs one at a time, mixing well after each addition. Stir in vanilla extract until smooth.
Frying

Heat the Oil
In a large, deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros
Transfer the dough into a piping bag fitted with a star tip. Pipe 4-6 inch long strips of dough into the hot oil, cutting with scissors.

Fry the Churros
Fry the churros for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.
Sugar Coating

Mix Sugar and Cinnamon
In a shallow bowl, combine granulated sugar and ground cinnamon.

Coat the Churros
While still warm, roll the churros in the sugar mixture to coat evenly.
Chocolate Sauce

Heat the Cream
In a small saucepan over medium heat, heat the heavy cream until it begins to simmer.

Add Chocolate Chips
Remove from heat and add semi-sweet chocolate chips. Let sit for a couple of minutes, then stir until smooth.

Stir in vanilla extract until fully combined.
