For the Calamari

Preparing the Marinara Sauce

    Sauté Garlic

    In a medium saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute, until fragrant.

    Add Tomatoes and Spices

    Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, red pepper flakes, and sugar. Bring the sauce to a simmer.

    Simmer the Sauce

    Reduce heat to low and let the sauce simmer for about 20 minutes, stirring occasionally. Adjust seasoning to taste.

Preparing the Calamari

    Clean the Calamari

    If using whole calamari, clean and slice the squid into rings. Rinse under cold water and pat dry with paper towels.

    Prepare the Coating

    In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper until well combined.

    Coat the Calamari

    Dredge the calamari rings in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

    Heat the Oil

    In a large heavy pot or deep fryer, heat the vegetable oil to 375°F (190°C). Use a thermometer for accuracy.

    Fry the Calamari

    Fry the calamari in batches, without overcrowding, for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

    Serve

    Serve the fried calamari hot with the marinara sauce on the side for dipping.
