Prepare the Brussels Sprouts
Trim the stems of the Brussels sprouts and remove any yellowing outer leaves. Rinse them under cold water and set aside.

Prepare the Pork Belly
Cut the pork belly into small cubes (about 1-inch pieces). Season lightly with salt and pepper.
Cooking

Cook the Pork Belly
In a large skillet or frying pan over medium heat, add the pork belly cubes. Cook for about 5-7 minutes, or until they are crispy and the fat has rendered. Remove from the pan and set aside, leaving the fat in the pan.

Sauté the Brussels Sprouts
In the same skillet, add the Brussels sprouts and sauté in the rendered fat for about 8-10 minutes or until they are golden brown and tender, stirring occasionally.

Make the Soy Glaze
In a small bowl, whisk together soy sauce, chili garlic sauce, honey, and rice vinegar until well combined.

Combine Everything
Once the Brussels sprouts are cooked, add the crispy pork belly back to the skillet and pour the soy glaze over the mixture. Stir well to coat everything evenly and cook for an additional 2-3 minutes until the sauce thickens slightly.
Serving

Garnish and Serve
Transfer the Brussels sprouts and pork belly to a serving dish. Sprinkle with sesame seeds and chopped green onions before serving. Enjoy your dish warm!
