Marinade Preparation

    Prepare the Chiles

    Remove the stems and seeds from the dried guajillo and ancho chiles. Place them in a saucepan and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes until soft. Drain and set aside.

    Blend the Marinade

    In a blender, combine the softened chiles, pineapple juice, garlic, ground cumin, oregano, salt, black pepper, and white vinegar. Blend until smooth.

    Marinate the Pork

    In a large bowl, add the sliced pork shoulder and pour the marinade over it. Ensure all pieces are well coated. Cover and refrigerate for at least 4 hours, or preferably overnight.

Cooking the Pork

    Grill the Pork

    Preheat your grill to medium-high heat. Remove the pork from the marinade, allowing excess marinade to drip off. Grill the pork slices for about 4-5 minutes on each side, or until fully cooked and slightly charred.

    Rest the Pork

    Once cooked, remove the pork from the grill and let it rest for about 5 minutes before slicing it into small pieces.

Serving

    Prepare the Tacos

    Warm the corn tortillas on the grill or in a pan. Place a generous amount of the grilled pork on each tortilla.

    Top with diced pineapple, chopped cilantro, and diced onion. Serve with lime wedges on the side for squeezing over the tacos.
