    Prepare the Au Jus

    In a saucepan, heat the olive oil over medium heat. Add the sliced onions and minced garlic, sautéing until they are softened and translucent, about 5 minutes.

    Make the Beef Broth

    Pour in the beef broth and bring to a simmer. Add black pepper and salt to taste. Allow the au jus to simmer for 10 minutes.

    Warm the Beef

    In a separate pan, warm the sliced Italian beef. You can add a bit of the au jus to keep it moist.

    Assemble the Sandwich

    Slice the French rolls in half. Place warm Italian beef on the bottom half of each roll. Top with provolone cheese.

    Melt the Cheese

    Place the assembled sandwiches under a broiler for 2-3 minutes, until the cheese is melted and bubbly.
