    Prepare the Pork

    Trim any excess fat from the pork tenderloin and season it with salt, black pepper, and turmeric powder.

    Prepare the Vegetables

    Wash the little gem lettuce and slice it in half lengthwise. Mince the garlic and finely chop the shallot.

Cooking

    Sear the Pork

    Heat olive oil in a skillet over medium-high heat. Add the pork tenderloin and sear on all sides until golden brown, about 6-8 minutes.

    Cook the Pork Thoroughly

    Reduce the heat to medium-low and cover the skillet. Cook for an additional 10-15 minutes or until the internal temperature reaches 145°F (63°C). Remove from skillet and let rest.

    Sauté the Vegetables

    In the same skillet, add the minced garlic and chopped shallot. Sauté until fragrant, about 1-2 minutes. Add the little gem lettuce and sauté until wilted, about 3-4 minutes.

    Serve

    Slice the pork tenderloin and serve it over the sautéed little gem lettuce. Drizzle with any remaining pan juices.
