Method

Crust

  1. 1

    Prepare the Crust

In a mixing bowl, combine all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

  2. 2

    Form the Dough

Add ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press it into the pan and trim any excess dough.

  5. 5

    Pre-bake the Crust

Preheat the oven to 350°F (175°C). Prick the bottom of the crust with a fork and bake for 15-20 minutes, or until lightly golden. Remove from oven and let cool.

Filling

  1. 6

    Prepare the Filling

In a mixing bowl, combine the fresh fruit with granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix gently until the fruit is well coated.

  2. 7

    Fill the Tart

Pour the fruit filling into the pre-baked tart crust, spreading it evenly.

  3. 8

    Bake the Tart

Return the tart to the oven and bake for an additional 25-30 minutes, or until the filling is bubbly and the fruit is tender.

  4. 9

    Cool the Tart

Remove from the oven and let the tart cool to room temperature before serving.

Topping

  1. 10

    Serve with Toppings

Before serving, sprinkle powdered sugar on top of the tart and add whipped cream if desired.
