Falafel Directions

Soak the Chickpeas
Place the dried chickpeas in a bowl and cover them with plenty of water. Let them soak overnight (or at least 8 hours) until they are doubled in size.

Add Flour
Transfer the mixture to a bowl and fold in the chickpea flour until the mixture holds together. Form into small patties (about 2 inches in diameter).

Fry the Falafel
In a large skillet, heat olive oil over medium heat. Once hot, carefully add the falafel patties (in batches if necessary) and fry until golden brown, about 3-4 minutes per side. Drain on paper towels.

Blend the Ingredients
In a food processor, combine the canned chickpeas, tahini, lemon juice, minced garlic, olive oil, salt, and water. Blend until smooth.

Adjust Consistency
If the hummus is too thick, add more water, one tablespoon at a time, until the desired consistency is achieved. Taste and adjust seasoning if needed.
