Method
Cauliflower Preparation

Preheat Oven
Preheat your oven to 425°F (220°C).

Prepare Cauliflower
Remove the leaves from the cauliflower and cut it into florets. Rinse under cold water and pat dry.

Season Cauliflower
In a large mixing bowl, toss the cauliflower florets with olive oil, salt, and black pepper until evenly coated.

Roast Cauliflower
Spread the cauliflower florets on a baking sheet in a single layer. Roast in the preheated oven for 25-30 minutes, or until golden brown and tender.

Add Parmesan
Remove the cauliflower from the oven and sprinkle the grated Parmesan cheese over the top. Return to the oven for an additional 5-7 minutes until the cheese is melted.

Slice Onions
Peel and slice the onions into thin rings.

Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Pesto Aioli Preparation

Combine Ingredients
In a medium bowl, combine mayonnaise, pesto, lemon juice, and minced garlic.

Stir until all ingredients are well combined and smooth.
Assembly

Plate the Dish
On a serving platter, layer the roasted cauliflower and top with caramelized onions.

Drizzle Aioli
Drizzle the pesto aioli over the cauliflower and onions.

Sprinkle with fresh parsley and basil before serving.
