Boil the Potatoes

In a large pot, bring salted water to a boil. Add the potatoes and cook until tender, about 20-25 minutes. Drain and allow to cool slightly.

Mash the Potatoes

Once the potatoes are cool enough to handle, peel them and mash them in a large bowl until smooth.

Make the Dough

Add the flour, egg, and salt to the mashed potatoes. Mix together until a dough forms. If the dough is too sticky, add a little more flour until it is manageable.

Shape the Gnocchi

On a floured surface, take a portion of the dough and roll it into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. Optionally, you can press each piece with a fork to create ridges.

Cook the Gnocchi

Bring a large pot of salted water to a boil. Drop the gnocchi in batches into the boiling water. Once they float to the surface, they are done (about 2-3 minutes). Remove them with a slotted spoon and set aside.

Prepare the Sauce

In a skillet, heat the olive oil over medium heat. Add the tomato passata and simmer for 10 minutes, stirring occasionally.

Combine and Serve

Add the cooked gnocchi to the skillet with the tomato sauce. Toss gently to coat. Serve hot, topped with grated Parmesan cheese.
