Cooking Instructions

  1. 1

    Prepare the Ingredients

Chop the andouille sausage, bell pepper, onion, and green onions finely.

  2. 2

    Whisk the Eggs

In a large bowl, crack the 6 eggs and add 1 cup of milk. Whisk together until well combined.

  3. 3

    Cook the Sausage

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, add the chopped andouille sausage and cook for about 5 minutes until it's browned and slightly crispy.

  4. 4

    Sauté the Vegetables

Add the chopped bell pepper and onion to the skillet with the sausage. Sauté for another 3-4 minutes until the vegetables are soft.

  5. 5

    Add the Egg Mixture

Pour the egg and milk mixture into the skillet, adding salt and black pepper. Stir gently to combine the sausage and vegetables with the eggs.

  6. 6

    Cook the Scramble

Cook the mixture over medium-low heat, stirring occasionally, for about 7-10 minutes, or until the eggs are cooked through but still soft.

  7. 7

    Add Cheese and Green Onions

Once the eggs are nearly set, sprinkle 1 cup of shredded cheese on top and add the chopped green onions. Cover the skillet for a couple of minutes until the cheese is melted.

  8. 8

    Serve

Remove from heat and serve warm. Enjoy your Mardi Gras Scramble!
