In a large heavy-bottomed pot, melt the butter over medium heat. Add the flour and stir constantly for about 20-25 minutes until the mixture turns a rich brown color (this is your roux).

Sauté the Vegetables

Once the roux is ready, add the diced onion, green bell pepper, and celery to the pot. Sauté for about 5-7 minutes until the vegetables are soft. Add the minced garlic and cook for an additional minute.

Add Crawfish and Seasoning

Stir in the crawfish tails, Cajun seasoning, bay leaves, salt, and black pepper. Cook for about 2-3 minutes to allow the flavors to meld.

Gradually add the chicken broth, stirring continuously to prevent lumps. Bring the mixture to a simmer.
