    Prepare the Ingredients

    Begin by slicing the Andouille sausage and cutting the chicken thighs into bite-sized pieces.

    Sauté the Sausage and Chicken

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and chicken, cooking until browned, about 5-7 minutes. Remove and set aside.

    Cook the Vegetables

    In the same pot, add the chopped onion, bell pepper, and celery (the ‘holy trinity’ of Cajun cooking). Sauté for about 5 minutes until softened.

    Add Garlic and Tomatoes

    Stir in the minced garlic and cook for an additional minute. Then, add the canned diced tomatoes, stirring to combine.

    Combine with Broth and Seasonings

    Pour in the chicken broth and add the okra, bay leaves, Cajun seasoning, salt, and black pepper. Bring to a boil.

    Simmer the Gumbo

    Once boiling, reduce heat to low, add the cooked sausage and chicken back to the pot, and let it simmer uncovered for about 30-40 minutes, stirring occasionally.

    Remove the bay leaves before serving. Ladle the gumbo into bowls over a scoop of cooked rice. Garnish with chopped green onions and parsley.
