    Prepare the Gator Meat

    If using gator meat, cut it into bite-sized pieces. If using chicken, cut the chicken into similar bite-sized pieces.

    Marinate the Meat

    Place the cut gator or chicken pieces in a bowl and pour the buttermilk over them. Ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

    In a separate bowl, mix together the flour, cornmeal, cajun seasoning, salt, and black pepper until well combined.

    In a deep skillet or fryer, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter in; if it sizzles, it’s ready.
