    Sauté the Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms, diced green bell pepper, and diced onion. Sauté for about 5 minutes, or until the vegetables are softened.

    Add Garlic

    Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant, being careful not to burn the garlic.

    Incorporate Fried Potatoes

    Add the diced fried potatoes to the skillet and mix well. Cook for another 3-4 minutes until the potatoes are heated through and slightly crispy.

    Prepare the Eggs

    In a bowl, crack the eggs and whisk them together with salt and black pepper until well combined.

    Scramble the Eggs

    Pour the whisked eggs over the sautéed vegetables and potatoes in the skillet. Gently stir and cook until the eggs are just set, about 4-5 minutes.

    Add Pico de Gallo

    Once the eggs are cooked to your liking, gently fold in the pico de gallo and cook for an additional 1-2 minutes to heat through.
