Crust Preparation

    Make the Crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

    Press the Crust

    Press the crumb mixture evenly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes until lightly golden. Remove from oven and let cool.

Cheesecake Filling Preparation

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in granulated sugar and mix until combined. Add sour cream and vanilla extract, mixing until smooth.

    Add Eggs

    Add eggs one at a time, mixing on low speed until just incorporated. Do not overmix.

    Bake the Cheesecake

    Pour the cheesecake filling over the cooled crust. Bake at 325°F (160°C) for 45-55 minutes or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool inside for 1 hour.

    Make the Crème Brûlée Layer

    In a saucepan, heat heavy cream and granulated sugar over medium heat until the sugar is dissolved. In a separate bowl, whisk egg yolks and vanilla until combined.

    Combine and Cook

    Slowly pour the warm cream mixture into the egg yolks, whisking continuously to temper the eggs. Return the mixture to the saucepan and cook over low heat until thickened slightly, about 5-8 minutes.

    Layer on Cheesecake

    Pour the crème brûlée mixture over the cooled cheesecake layer. Refrigerate for at least 4 hours or overnight until set.

Topping Preparation

    Prepare the Topping

    Once set, drizzle the caramel sauce over the top of the cheesecake. Top with whipped cream and optional fresh berries for garnish.
