    Chop the Conecuh sausage and bacon into bite-sized pieces. Dice the green bell pepper and onion. If not already prepared, fry the potatoes until golden brown and crispy.

    In a large skillet over medium heat, add the chopped Conecuh sausage and bacon. Cook until browned and crispy, about 5-7 minutes. Stir occasionally to ensure even cooking.

    Sauté Vegetables

    Add the diced green bell pepper and onion to the skillet with the cooked meats. Sauté for 3-4 minutes, or until the onions are translucent and the peppers are tender.

    Incorporate Fried Potatoes

    Mix in the fried potatoes with the meat and vegetables. Season with salt and black pepper. Cook for an additional 2-3 minutes, stirring occasionally.

Eggs and Sauce

    Scramble the Eggs

    In a separate bowl, whisk the eggs until well beaten. Pour the eggs into the skillet over the meat and vegetable mixture. Gently stir and cook until the eggs are fully scrambled and cooked through, about 3-5 minutes.

    Once the eggs are cooked, remove the skillet from heat. Plate the breakfast scramble and drizzle with hollandaise sauce over the top.
