Preparation of Crab Claws

Prepare the Breading
In a mixing bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well to create a dry breading mixture.

Prepare the Wet Mixture
In another bowl, whisk together eggs and buttermilk until smooth. This will be your wet batter.

Coat the Crab Claws
Dip each blue crab claw first into the wet mixture, allowing excess to drip off, and then coat it in the dry breading mixture, pressing gently to ensure even coverage.

Heat the Oil
In a large, deep skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Crab Claws
Carefully add coated crab claws to the hot oil in batches. Fry for about 4-5 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.

Mix the Ingredients
In a small bowl, combine ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir until well mixed.

Taste the cocktail sauce and adjust the hot sauce to your desired level of spiciness.
