    Prepare the Dough

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined.

    Mix Wet Ingredients

    In a separate bowl, whisk together the milk, vanilla extract, and egg until smooth.

    Combine Mixtures

    Pour the wet mixture into the dry ingredients and stir until just combined. Do not overmix; the dough should be soft and slightly sticky.

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of dough into it; if it sizzles, it's ready.

    Fry the Beignet Bites

    Using a small spoon or cookie scoop, drop tablespoon-sized portions of the dough into the hot oil. Fry for about 2-3 minutes, turning occasionally, until they are golden brown.

    Drain and Dust

    Once cooked, remove the beignets from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still warm, toss them in powdered sugar to coat.

    Serve the beignet bites warm, dusted with additional powdered sugar if desired.
