For the Tiramisu

Method

Preparation

  1. 1

    Brew the Espresso

Brew 1 cup of strong espresso and allow it to cool to room temperature. If desired, stir in 2 tablespoons of coffee liqueur for added flavor.

  2. 2

    Prepare the Mascarpone Mixture

In a large bowl, combine 16 oz of mascarpone cheese, 1 cup of heavy cream, 3 tablespoons of granulated sugar, and 1 teaspoon of vanilla extract. Use an electric mixer to whip the mixture until it forms soft peaks.

  3. 3

    Soak the Ladyfingers

Quickly dip each ladyfinger into the cooled espresso, making sure they are soaked but not soggy. Arrange half of the soaked ladyfingers in a single layer at the bottom of a 9x13 inch dish.

  4. 4

    Layer the Mixture

Spread half of the mascarpone mixture over the layer of soaked ladyfingers, smoothing it out evenly.

  5. 5

    Repeat Layers

Add another layer of soaked ladyfingers on top of the mascarpone layer, followed by the remaining mascarpone mixture. Smooth the top with a spatula.

  6. 6

    Chill the Tiramisu

Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

  7. 7

    Serve

Just before serving, dust the top of the tiramisu with cocoa powder using a fine sieve. Cut into squares and serve chilled.
