Soup Preparation

    Sauté the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, for about 30 minutes until they are caramelized and golden brown.

    Once the onions are caramelized, add minced garlic and sauté for an additional 2 minutes until fragrant.

    Deglaze with Wine

    Pour in the dry white wine, scraping the bottom of the pot to release any browned bits. Allow the wine to reduce slightly, cooking for about 5 minutes.

    Add Broth and Herbs

    Stir in the beef broth, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Taste and Adjust

    Taste the soup and adjust seasoning with more salt and pepper as desired. Remove the bay leaf before serving.

    Prepare the Baguette

    Slice the baguette into 1-inch thick slices and toast them until golden brown.

    Ladle the hot soup into oven-safe bowls, place a slice of toasted baguette on top of each bowl, and generously sprinkle with Gruyère cheese.

    Place the bowls under the broiler for 3-5 minutes or until the cheese is melted and bubbly. Watch closely to prevent burning.
