    Prepare the Vegetables

    Wash and slice the eggplant, zucchini, bell pepper, onion, and tomatoes into even-sized pieces to ensure even cooking.

    Mince the Garlic

    Peel and mince the garlic cloves.

    Herb Prep

    Chop the fresh basil and gather the thyme, salt, and black pepper.

Cooking

    Sauté the Onions and Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sliced onions. Sauté until the onions are translucent, about 5 minutes.

    Add Remaining Vegetables

    Add the eggplant, zucchini, and bell pepper to the skillet. Stir well to combine. Cook for about 10 minutes, stirring occasionally.

    Incorporate Tomatoes and Seasoning

    Add the tomatoes, thyme, salt, and black pepper to the skillet. Stir and cook for another 5 minutes until the tomatoes are softened.

    Finish with Herbs and Olive Oil

    Remove from heat and stir in the chopped basil. Drizzle with the remaining olive oil and balsamic vinegar. Adjust seasoning to taste.
