    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    While the pasta is cooking, wash and chop the bell pepper, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes and set all vegetables aside.

    Sauté the Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.

    Add the Vegetables

    Add the chopped bell pepper, zucchini, and carrot to the skillet. Cook for 5-7 minutes, stirring frequently until the vegetables are tender but still crisp.

    Incorporate Spinach and Tomatoes

    Stir in the cherry tomatoes and fresh spinach. Cook for an additional 2-3 minutes until the spinach has wilted and the tomatoes are slightly softened.

    Combine Pasta and Sauce

    Add the cooked pasta to the skillet with the sautéed vegetables. Toss everything together until the pasta is well coated with the olive oil and vegetables.

    Season with salt and black pepper to taste. Sprinkle grated Parmesan cheese over the top and toss again to combine.
