Chocolate Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir occasionally until completely melted and smooth. Remove from heat and let it cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk together the large eggs and granulated sugar until the mixture is pale and slightly thickened. This will take about 5 minutes.

Combine Chocolate Mixture
Once the chocolate mixture has cooled slightly, whisk in the vanilla extract. Gradually fold the melted chocolate into the egg mixture until fully combined.

Whip Cream
In another bowl, whip the heavy whipping cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no streaks remain.

Chill the Mousse
Spoon the mousse mixture into serving glasses or bowls and refrigerate for at least 2 hours, or until set.

Whip the Cream
In a mixing bowl, add the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or whisk, beat the mixture until stiff peaks form.

Once the mousse is set, top each serving with a generous dollop of whipped cream before serving.
