Method

Preparation

  1. 1

    Preheat Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter, then dust them with cocoa powder.

  2. 2

    Melt Chocolate and Butter

In a medium saucepan over low heat, melt the unsweetened chocolate and unsalted butter together, stirring until smooth. Remove from heat and let cool slightly.

Mixing Ingredients

  1. 3

    Combine Sugar and Eggs

In a mixing bowl, combine the granulated sugar, large eggs, and large egg yolks. Whisk until well blended and slightly thickened.

  2. 4

    Add Chocolate Mixture

Gradually pour the melted chocolate mixture into the egg mixture, whisking continuously until combined.

  3. 5

    Fold in Dry Ingredients

Sift in the all-purpose flour and add the vanilla extract and a pinch of salt. Gently fold the mixture until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool and Serve

Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the cake to slide out. Serve immediately, dusted with powdered sugar and with a scoop of vanilla ice cream if desired.
