Crust Preparation

Preheat the Oven
Preheat your oven to 325°F (163°C).

Mix Crust Ingredients
In a medium bowl, mix graham cracker crumbs, 0.5 cups of sugar, and melted butter until the mixture resembles wet sand.

Form the Crust
Press the graham cracker mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

Bake the Crust
Bake the crust in the preheated oven for 10 minutes. Remove and let cool while preparing the filling.
Filling Preparation

Prepare the Filling
In a large mixing bowl, beat softened cream cheese with an electric mixer until smooth and creamy.

Add Sugar and Sour Cream
Gradually add 1 cup of sugar and 0.5 cups of sour cream, beating until well combined.

Incorporate Vanilla and Eggs
Add 1 tsp of vanilla extract and mix well. Then, add the eggs one at a time, mixing on low speed until just blended. Do not overmix.

Gently fold in 2 tablespoons of all-purpose flour until just incorporated.

Pour Filling into Crust
Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.

Bake the Cheesecake
Bake in the preheated oven for 55-60 minutes, or until the center is set and slightly jiggly.

Cool the Cheesecake
Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour. Then, refrigerate for at least 4 hours or overnight.
