Marinara Sauce

Preparing the Calamari

Clean the Calamari
Rinse the fresh calamari under cold water and remove the outer skin. Clean the insides and cut the calamari into rings about 1/2 inch thick.

Marinate the Calamari
Place the calamari rings in a bowl and cover them with buttermilk. Let them marinate in the refrigerator for at least 30 minutes.
Preparing the Marinara Sauce

Combine Ingredients
Add the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes to the saucepan. Stir well to combine.

Cook the Sauce
Simmer the sauce on low heat for about 15-20 minutes, stirring occasionally. Adjust seasoning as necessary.

Finish the Sauce
Stir in the chopped fresh parsley and remove from heat. Set aside to keep warm.
Frying the Calamari

Prepare the Frying Station
In a deep pot or fryer, heat the vegetable oil to 375°F (190°C).

Mix Dry Ingredients
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Calamari
Remove the marinated calamari from the buttermilk and let the excess drip off. Dredge the calamari rings in the flour mixture until fully coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches, avoiding overcrowding. Fry for 2-3 minutes until they are golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Serve the fried calamari hot with the marinara sauce on the side for dipping.
