Prepare the Beef

Season the Beef
Season the beef fillet generously with salt and black pepper on all sides.

Sear the Beef
In a large skillet, heat olive oil over medium-high heat. Once hot, add the beef fillet, searing for 2-3 minutes on each side until browned. Remove from heat and let it cool.

Assemble the Wellington

Roll out the Pastry
On a lightly floured surface, roll out the puff pastry to a rectangle large enough to wrap the beef fillet.

Layer the Duxelles
Spread the cooled mushroom duxelles evenly over the rolled-out pastry.

Wrap the Beef
Place the beef fillet in the center of the pastry. Carefully fold the pastry over the beef, sealing the edges. Trim excess pastry if necessary.

Bake the Wellington

Preheat the Oven
Preheat your oven to 200°C (400°F).

Bake
Place the wrapped Wellington on a baking tray and bake for 25-30 minutes until the pastry is golden brown and crispy.

Remove from the oven and let it rest for 10 minutes before slicing and serving.
