    Prepare the Portobello Mushrooms

    Clean the Portobello mushrooms with a damp paper towel and remove the stems. Set aside.

    Sauté the Garlic and Spinach

    In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Add the fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper.

    Glaze the Mushrooms

    In the same skillet, add the Portobello mushrooms. Cook for about 5 minutes on each side, until tender. Pour in the Port wine and let it reduce for about 3-4 minutes, allowing the mushrooms to absorb the flavors.

    Melt the Mozzarella

    Place slices of fresh mozzarella on top of the mushrooms and cover the skillet. Cook for an additional 2-3 minutes until the cheese is melted.

    Serve

    Slice the focaccia bread and serve the sautéed Portobello mushrooms on top of the bread, garnished with the sautéed spinach.
