Prepare the Flank Steak

Preheat the oven to 400°F (200°C). Rub the flank steak with olive oil, garlic powder, salt, and black pepper. Place on a baking sheet.

Roast the Steak

Roast the flank steak in the preheated oven for 20-25 minutes for medium-rare, or until desired doneness. Allow it to rest before slicing.

Prepare the Fries

Cut the russet potatoes into thin wedges. Toss with olive oil, salt, paprika, and garlic powder.

Spread the fries on a baking sheet in a single layer and roast in the oven for 30-35 minutes, flipping halfway through, until golden and crispy.

Caramelize the Onions

In a skillet over medium heat, melt the butter and olive oil. Add sliced onions and cook slowly, stirring occasionally, until they are caramelized, about 20-25 minutes.

In a skillet, cook the pancetta over medium heat until crispy. Remove and set aside.

In a bowl, whisk the eggs with salt and pepper. In the same skillet used for pancetta, add butter, then pour in the eggs. Stir gently until softly scrambled. Mix in the cooked pancetta, chives, and chopped green onions before serving.
