Cooking Instructions
- 1
Cook the Pasta
In a large pot, bring salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Drain and set aside.
- 2
Prepare the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the diced tomatoes and sliced zucchini, cooking until the zucchini is tender, about 5-7 minutes. Season with salt and black pepper.
- 3
Sear the Haddock
In another skillet, heat the remaining tablespoon of olive oil over medium-high heat. Season the haddock fillets with salt and black pepper. Add the fillets to the skillet and sear for 3-4 minutes on each side, or until golden brown and cooked through.
- 4
Deglaze and Add Flavor
Remove the haddock from the skillet and set aside. In the same skillet, add the white wine to deglaze, scraping up any brown bits. Let it simmer for 2-3 minutes to reduce slightly. Stir in the fresh basil leaves.
- 5
Combine and Serve
Plate the cooked angel hair pasta, top with the sautéed vegetables, and place the seared haddock on top. Drizzle with the white wine and basil sauce. Serve immediately.
