Prepare the custard
In a bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Soak the bread
Dip each slice of brioche in the egg mixture, allowing it to soak for a few seconds on each side.

Cook the French toast
In a skillet, melt 1 tablespoon of butter over medium heat. Add the soaked brioche slices and cook for 2-3 minutes on each side until golden brown. Repeat with remaining slices, adding more butter as needed.

Caramelize the bananas
In the same skillet, add the sliced bananas and brown sugar. Cook for 2-3 minutes until the bananas are caramelized, stirring gently.

Whip the Chantilly cream
In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

Serve the French toast topped with caramelized bananas, mixed berries, a drizzle of maple syrup, and a dollop of Chantilly cream.
