    Prepare the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 30-40 minutes.

    Add Liquid Ingredients

    Once the onions are caramelized, add the dry white wine, scraping any browned bits from the bottom of the pot. Let it simmer for about 5 minutes.

    Add Broth and Seasonings

    Pour in the beef bone broth, add the thyme, bay leaves, salt, and black pepper. Bring the soup to a gentle simmer and let it cook for an additional 20-30 minutes.

    Prepare the Croutons

    While the soup simmers, preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and sprinkle with a little olive oil. Toast in the oven for about 10-15 minutes until golden and crispy.

    Remove the bay leaves from the soup. Ladle the hot soup into oven-safe bowls, place a toasted baguette slice on top of each bowl, and generously sprinkle with grated Gruyère cheese.
