    Prepare the Ingredients

    Clean and slice the shitake mushrooms. Dice the chicken breast into bite-sized pieces. Chop the green onions and parsley.

    Cook the Linguine

    In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.

    Cook the Chicken

    In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast, season with salt and black pepper, and cook until golden brown and fully cooked, about 5-7 minutes.

    Add the Mushrooms

    Add the sliced shitake mushrooms to the skillet with the chicken. Sauté for about 3-4 minutes until the mushrooms are soft.

    Combine Ingredients

    Add the cooked linguine to the skillet. Toss everything together, adding a splash of reserved pasta water if needed. Squeeze the juice of the lemon over the pasta and mix well.

    Finish with Green Onions and Parsley

    Remove from heat and stir in the chopped green onions and parsley. Adjust seasoning with more salt and pepper if needed.

    Serve hot, garnished with additional parsley and lemon wedges if desired.
