Method

Prepare the Cedar Plank Salmon

    Soak the Cedar Plank

    Soak the cedar plank in water for at least 2 hours before grilling to prevent it from catching fire.

    Make the Cider Reduction

    In a small saucepan, combine the cider and honey. Bring to a boil, then reduce heat and let simmer until the mixture reduces by half, about 15 minutes.

    Prepare the Salmon

    Preheat the grill to medium heat. Season the salmon fillets with salt and pepper. Place the salmon on the soaked cedar plank and brush with the cider reduction.

Roast the Vegetables

    Preheat the oven to 425°F (220°C). In a bowl, combine the diced carrots, parsnips, and turnips with olive oil, salt, and pepper. Toss to coat.

    Spread the vegetables on a baking sheet and roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.

Roast the Fingerling Potatoes
