Method

Cooking the Pasta

  1. 1

    Boil the Water

Bring a large pot of salted water to a boil over high heat.

  2. 2

    Cook the Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually around 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining, reserve about 1 cup of the pasta cooking water, then drain the spaghetti.

Preparing the Sauce

  1. 4

    Cook the Pancetta

In a large skillet over medium heat, add the pancetta. Cook until it becomes crispy, about 4-5 minutes. Remove from heat.

  2. 5

    Mix Eggs and Cheese

In a bowl, whisk together the eggs and grated Parmesan cheese until well combined. Add a generous amount of black pepper.

Combining Ingredients

  1. 6

    Combine Pasta and Pancetta

Add the drained spaghetti to the skillet with pancetta. Toss well to coat the pasta in the pancetta fat.

  2. 7

    Create the Sauce

Remove the skillet from heat. Quickly pour the egg and cheese mixture over the hot pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until you reach the desired consistency.

Serving

  1. 8

    Plate the Dish

Serve immediately, garnished with additional Parmesan cheese and black pepper to taste.
