Method

Cooking Pasta

  1. 1

    Boil Water

In a large pot, bring salted water to a boil.

  2. 2

    Cook Spaghetti

Add the spaghetti to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.

  3. 3

    Reserve Pasta Water

Before draining the pasta, reserve about 1 cup of the pasta cooking water.

  4. 4

    Drain Pasta

Drain the spaghetti and set aside.

Making the Sauce

  1. 5

    Cook Pancetta

In a large skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy, about 5-7 minutes.

  2. 6

    Prepare Egg Mixture

In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

  3. 7

    Combine Pasta and Sauce

Once the pancetta is crispy, reduce the heat to low. Add the drained spaghetti to the skillet and toss to combine with the pancetta.

  4. 8

    Add Egg Mixture

Remove the skillet from heat and quickly pour in the egg mixture, tossing the pasta continuously to create a creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.

Serving

  1. 9

    Plate the Carbonara

Serve the pasta carbonara immediately with extra grated Parmesan cheese and additional black pepper on top.
