Cooking Pasta

Boil Water
In a large pot, bring salted water to a boil.

Cook Spaghetti
Add the spaghetti to the boiling water and cook according to package instructions until al dente, about 8-10 minutes.

Reserve Pasta Water
Before draining the pasta, reserve about 1 cup of the pasta cooking water.

Drain Pasta
Drain the spaghetti and set aside.
Making the Sauce

Cook Pancetta
In a large skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy, about 5-7 minutes.

Prepare Egg Mixture
In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.

Combine Pasta and Sauce
Once the pancetta is crispy, reduce the heat to low. Add the drained spaghetti to the skillet and toss to combine with the pancetta.

Plate the Carbonara
Serve the pasta carbonara immediately with extra grated Parmesan cheese and additional black pepper on top.
