Preparing the Base

    Heat the Milk and Cream

    In a medium saucepan, combine the whole milk and heavy cream. Heat over medium heat until it is warm but not boiling, stirring occasionally.

    Whisk the Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the warm milk and cream mixture into the bowl with the egg yolks and sugar, whisking constantly to temper the eggs.

    Cook the Mixture

    Return the combined mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 5-7 minutes).

    Remove the saucepan from the heat and stir in the vanilla extract. Allow the mixture to cool to room temperature.

    Once the base has cooled, add the fresh fruit puree or cocoa powder (if making chocolate gelato) and stir well to combine.

Churning and Serving

    Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 20-30 minutes).
