Method

Main Dish

  1. 1

    Prepare the Lamb

Preheat your oven to 350°F (175°C). Make small slits all over the leg of lamb and insert garlic cloves into the slits.

  2. 2

    Season the Lamb

In a small bowl, combine olive oil, salt, black pepper, and chopped rosemary. Rub this mixture all over the lamb.

  3. 3

    Roast the Lamb

Place the lamb in a roasting pan and roast for about 1.5 to 2 hours, or until it reaches an internal temperature of 145°F (63°C) for medium-rare.

Sides

  1. 4

    Prepare the Vegetables

While the lamb is roasting, wash the baby potatoes and carrots. Cut the carrots into even-sized pieces.

  2. 5

    Boil the Potatoes

In a large pot, bring salted water to a boil. Add potatoes and cook for about 15-20 minutes until tender.

  3. 6

    Sauté the Carrots

In a skillet, melt butter over medium heat. Add the carrots and sauté for about 10 minutes until slightly caramelized. Stir in fresh parsley, and squeeze lemon juice over the top before serving.

Dessert

  1. 7

    Prepare the Cake Batter

In a large mixing bowl, combine cake mix, eggs, vegetable oil, and water. Mix until smooth and well combined.

  2. 8

    Bake the Cake

Pour the batter into a greased cake pan and bake according to the package instructions, usually about 30-35 minutes.

  3. 9

    Frost the Cake

Once the cake is cool, spread chocolate frosting evenly over the top and sides.
