Crust Preparation

    Prepare the crust

    Preheat your oven to 325°F (160°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.

Cheesecake Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

    Add sugar and sour cream

    Gradually add the granulated sugar and continue to beat until well combined. Then add the sour cream and vanilla extract, mixing until smooth.

    Incorporate eggs

    Add the eggs one at a time, mixing on low speed after each addition until just blended. Be careful not to overmix, as this can incorporate too much air.

    Add flour

    Sift the all-purpose flour over the filling mixture and gently fold it in until just combined.

Baking the Cheesecake

    Pour filling into crust

    Pour the cheesecake filling over the cooled graham cracker crust, smoothing the top with a spatula.

    Bake

    Bake in the oven at 325°F (160°C) for 55-65 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour.

    Chill

    Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, preferably overnight, before serving.
