Calamari Preparation

Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.

Prepare the Breading Station
In a bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and buttermilk.

Bread the Calamari
Dip each calamari ring first into the egg mixture, then dredge in the flour mixture, ensuring an even coating.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Working in batches, carefully place the breaded calamari into the hot oil and fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Add the Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, sugar, salt, and black pepper. Bring the sauce to a simmer.

Let the sauce simmer for about 15-20 minutes, stirring occasionally. Adjust seasoning to taste.
