Add Garlic and Flour
Stir in the minced garlic and cook for an additional minute. Sprinkle the flour over the vegetable mixture and stir to combine, cooking for another 2 minutes to form a roux.

Pour in the Stock
Gradually pour in the seafood stock while whisking to avoid lumps. Add the bay leaves and Cajun seasoning, and bring the mixture to a simmer.

Add Cream and Simmer
Once simmering, stir in the heavy cream. Allow the bisque to simmer for 15-20 minutes, stirring occasionally.

Add Shrimp and Tomatoes
In the same pot, add the shrimp and diced tomatoes. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

Taste the bisque and season with salt and black pepper as desired. Remove bay leaves before serving.

Ladle the bisque into bowls and garnish with chopped fresh parsley and sliced green onions. Serve with lemon wedges on the side.
