Pancake Preparation
Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of granulated sugar, 2 teaspoons of baking powder, and 0.5 teaspoon of salt. Whisk together until well combined.
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Cook Pancakes
Preheat a non-stick skillet or griddle over medium heat. Pour about 0.25 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter.
Berry Compote Preparation
Combine Ingredients
In a medium saucepan, combine 2 cups of mixed berries, 2 tablespoons of granulated sugar, and 1 tablespoon of lemon juice.
Cook Compote
Cook over medium heat, stirring occasionally, until the berries break down and the mixture thickens, about 10 minutes.
Cool Down
Remove from heat and let the compote cool slightly. It can be served warm or chilled.
