Make the Roux

In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly. Cook the roux, stirring frequently, until it turns a deep brown color, about 15-20 minutes.

Sauté the Vegetables

Once the roux is ready, add the chopped onion, green bell pepper, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened.

Add Garlic and Tomato Paste

Stir in the minced garlic and tomato paste. Cook for another 2-3 minutes, mixing well.

Incorporate Crawfish Stock

Slowly pour in the crawfish stock while stirring to prevent lumps. Bring the mixture to a simmer.

Add Crawfish and Seasonings

Add the crawfish tails, Worcestershire sauce, cayenne pepper, salt, and black pepper. Stir well and let it simmer for 15-20 minutes, allowing the flavors to meld together.

Spoon the crawfish étouffée over cooked rice in bowls. Garnish with sliced green onions before serving.
