Method

Preparing the Catfish

  1. 1

    Marinate the Catfish

In a large bowl, immerse the catfish fillets in buttermilk. Cover and refrigerate for at least 30 minutes to tenderize and flavor the fish.

  2. 2

    Prepare the Coating

In a separate bowl, combine cornmeal, all-purpose flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to ensure an even distribution of spices.

  3. 3

    Coat the Catfish

Remove the catfish fillets from the buttermilk, allowing excess liquid to drip off. Dredge each fillet in the cornmeal mixture until fully coated. Set aside on a plate.

  4. 4

    Heat the Oil

In a large skillet, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

  5. 5

    Fry the Catfish

Carefully place the coated catfish fillets in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove from oil and drain on paper towels.

Preparing the Fries

  1. 6

    Cut the Potatoes

Peel the russet potatoes and cut them into thick strips to form fries.

  2. 7

    Soak the Fries

Place the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch. This helps them become crispier when cooked.

  3. 8

    Dry the Fries

After soaking, drain the fries and pat them dry with paper towels to remove any moisture.

  4. 9

    Heat the Oil for Fries

In a separate large skillet or deep fryer, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

  5. 10

    Fry the Fries

Carefully add the dried potato strips to the hot oil in batches. Fry until golden brown and crispy, about 4-6 minutes. Remove and drain on paper towels. Season with salt to taste.
