Make Simple Citrus Syrup

    Combine sugar and water

    In a small saucepan, combine 1 cup granulated sugar with 1 cup cold water. Stir briefly to moisten the sugar.

    Heat to dissolve

    Place the saucepan over medium heat and warm, stirring occasionally, until the sugar fully dissolves and the mixture is clear. Do not boil vigorously — you only need a simmer to dissolve the sugar (about 3–5 minutes).

    Add zests

    Once the sugar is dissolved, remove from heat and stir in the lemon and lime zests (1 tsp each). Allow the zests to steep in the syrup for 10 minutes to extract oils.

    Strain and cool

    Strain the syrup through a fine mesh sieve to remove zest solids. Let the syrup cool to room temperature (about 15–20 minutes). If you want extra tartness, whisk in 1 tsp citric acid while warm so it dissolves; otherwise skip.

Assemble Sprite-style Soda

    Measure citrus juices

    In a measuring cup, combine 2 tbsp fresh lemon juice and 2 tbsp fresh lime juice. Taste — the mix should be bright and tart.

    Combine syrup and juices

    Add 3–4 tablespoons of the cooled simple citrus syrup to the citrus juices and stir to combine. Start with 3 tbsp, taste, and add a fourth if you prefer sweeter soda. If using vanilla extract, stir in 1 tsp now for a subtle roundness.

    Add carbonated water

    Pour 4 cups chilled carbonated water into a large pitcher. Slowly add the citrus-syrup mixture to the carbonated water, stirring gently once to combine. Avoid vigorous stirring to preserve carbonation.

    Adjust sweetness and tartness

    Taste the assembled soda. If it needs more sweetness, add up to 1 tbsp additional simple syrup. If more tartness is desired, dissolve a pinch (1/8–1/4 tsp) citric acid into a little syrup or water and stir in a small amount, tasting as you go.

    Serve

    Fill glasses with ice (about 1/2 cup per glass). Pour the soda over ice and top with a splash (about 1/2 cup total) of extra club soda if you want a bit more fizz. Garnish each glass with lemon or lime slices.

    Storage

    Store any leftover soda in a sealed bottle in the refrigerator for up to 24–48 hours; re-carbonation will be reduced over time. Store leftover simple syrup separately in the fridge for up to 2 weeks.
