Cocktail

Method

Prepare glass

  1. 1

    Rim the glass (optional)

Run a grapefruit wedge or lime around the outer rim of a highball or Collins glass. Dip the rim into coarse salt or Tajín to lightly coat. Set the glass aside.

Build the cocktail

  1. 2

Fill the prepared glass about two-thirds full with cubed ice.

  2. 3

In a cocktail shaker (or mixing glass) add the tequila (2 oz), freshly squeezed grapefruit juice (2 oz), fresh lime juice (1/2 oz) and agave syrup (1/2 oz).

  3. 4

Add a few ice cubes to the shaker, then shake vigorously for 8–10 seconds to chill and lightly dilute the mixture.

  4. 5

Strain the shaken mixture into the ice-filled prepared glass.

  5. 6

Top gently with Squirt (or another grapefruit soda) — about 2 oz — pouring slowly to retain some effervescence. Stir once or twice gently with a bar spoon to combine.

Garnish & serve

  1. 7

Garnish with a grapefruit wedge or a lime wheel on the rim. Serve immediately with a straw if desired.
